Amish Apple Fritter Bread

  • Author: Alyssa

Description

Savor Amish apple fritter bread! This moist, cinnamon-spiced loaf features sweet apple chunks and a sugary topping, perfect for breakfast or dessert.

Ingredients

Scale
  • 2 medium baking apples (peeled & chopped): The star of the show, these apples provide natural sweetness and a nice texture to the bread. Varieties like Granny Smith, Honeycrisp, or Fuji work best for a balanced flavor.
  • ½ cup light brown sugar: This sugar adds moisture and a rich, caramel-like flavor that complements the apples wonderfully.
  • 2 tsp ground cinnamon: A warm spice that enhances the autumn flavor of the bread, making each bite comforting and fragrant.
  • 1 tsp ground ginger: Adds a subtle zing and complexity to the flavor profile that pairs perfectly with apples and other spices.
  • 1 large egg (room temp): Essential for binding the mixture and adding richness to the dough.
  • ⅓ cup granulated sugar: Provides additional sweetness, balancing the flavors of the apples and spices.
  • ¼ cup vegetable oil: Keeps the bread moist and adds tenderness to the crumb.
  • ¼ cup sour cream (room temp): Adds a touch of tanginess and moisture, enhancing the bread’s texture.
  • 2 tsp vanilla extract: A flavor enhancer that brings all the ingredients together, making the bread aromatic and inviting.
  • 1 cup all-purpose flour: The base of the bread, providing structure and the foundation for the batter.
  • 1 tsp baking soda: A leavening agent that helps the bread rise and become light and fluffy.
  • ½ tsp kosher salt: Enhances the overall flavor and balances the sweetness.

For the Glaze:

  • 1 cup powdered sugar (sifted): Creates a sweet and smooth topping, elevating the bread and adding a visual appeal.
  • 1 tsp vanilla extract: Compliments the sweetness of the glaze and ties it back to the flavors in the bread.
  • 3 tbsp milk: Adjusts the consistency of the glaze, making it spreadable and perfectly sweet.

Instructions

  1. Preheat oven: Begin by preheating your oven to 350°F (175°C) and preparing your loaf pan by greasing it lightly or lining it with parchment paper for easy removal.
  2. Prepare the apple mixture: In a mixing bowl, combine 2 medium baking apples (peeled & chopped), ½ cup light brown sugar, 2 tsp ground cinnamon, and 1 tsp ground ginger. Mix thoroughly and set aside to let the flavors meld.
  3. Mix wet ingredients: In another bowl, whisk together 1 large egg (room temp), ⅓ cup granulated sugar, ¼ cup vegetable oil, ¼ cup sour cream (room temp), and 2 tsp vanilla extract until smooth.
  4. Combine dry ingredients: In a separate bowl, mix 1 cup all-purpose flour, 1 tsp baking soda, and ½ tsp kosher salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Incorporate apples: Gently fold in ¾ of the apple mixture into the batter until evenly distributed. Pour the mixture into the prepared loaf pan, smoothing it out evenly. Top with the remaining apple mixture to create a delicious topping.
  6. Bake: Place the loaf pan in the oven and bake for 50-55 minutes. You’ll know it’s done when the internal temperature reaches 200°F (93°C) or when a toothpick inserted in the center comes out clean. Once baked, allow it to cool in the pan for at least 30 minutes before transferring it to a wire rack.
  7. Make the glaze: In a small bowl, whisk together 1 cup powdered sugar (sifted), 1 tsp vanilla extract, and 3 tbsp milk. Adjust the consistency to your liking – add more milk for a thinner glaze or more powdered sugar for a thicker glaze.
  8. Glaze the bread: Once the bread has cooled, pour the glaze over it just before serving to ensure it’s beautifully coated and deliciously sweet!
