Instructions
- Preheat Oven: Set your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray to prevent sticking.
- Mix Dry Ingredients: In a medium-sized bowl, whisk 2 cups all-purpose flour, 1 1/2 tsp baking powder, and 1/2 tsp salt together until well combined. Set aside.
- Cream Butter & Sugar: In a large mixing bowl, beat 1/2 cup unsalted butter and 1 cup sugar together until the mixture becomes light and fluffy. This should take about 3-4 minutes. Add 2 large eggs, one at a time, mixing well after each addition.
- Add Milk & Dry Ingredients: Gradually alternate adding the flour mixture and 1/2 cup milk to the butter and sugar mixture, starting and ending with the flour. Mix until just combined to avoid over-mixing.
- Apple Mixture: In a separate bowl, toss 2 cups peeled & chopped apples with 1 tsp cinnamon and 1/4 cup brown sugar until the apples are well-coated and set aside.
- Assemble Bread: Pour half of the batter into the prepared loaf pan, and layer half of the apple mixture over it. Pour the remaining batter on top, followed by the rest of the apples, spreading them evenly.
- Bake: Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean. Make sure to check towards the end of the baking time to avoid overbaking.
- Cool & Serve: Remove from the oven and let it cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely before slicing. Enjoy the delightful flavors!
