- 1 red bell pepper (diced)
- ½ red onion (diced)

- 8 oz feta cheese
- 4 tbsp olive oil
- 1 tsp dried oregano

- Black pepper, to taste
- Red pepper flakes, to taste
- 1 cup baby spinach
- 4 large eggs
- Optional: fresh basil or chives for garnish

- Preheat your oven: Begin by preheating your oven to 400°F (200°C). This ensures that the dish cooks evenly and the feta melts perfectly.
- Prepare your baking dishes: If using ramekins, divide the 2 cups of cherry or grape tomatoes, 1 diced red bell pepper, ½ diced red onion, and 3 minced garlic cloves evenly among 4 dishes. If you prefer to use a larger baking dish, mix all the vegetables together and place the feta cheese in the center.
- Drizzle with olive oil: Pour 4 tablespoons of olive oil over the vegetables and feta. This will add richness and flavor to your dish.
- Add spices: In a small bowl, combine 1 teaspoon of dried oregano, sea salt, thyme, black pepper, and red pepper flakes to taste. Sprinkle this spice mixture evenly over the vegetables and feta cheese.
- Bake: Place the prepared dishes in the preheated oven and bake for 25 minutes. You want the tomatoes to soften and the feta to begin browning on the top.
- Add the spinach: After 25 minutes, remove the dishes from the oven. Gently stir in 1 cup of baby spinach, creating small wells in the vegetable mixture for the eggs.
- Crack the eggs: Carefully crack 4 large eggs into the wells you’ve created in the mixture. Take care not to break the yolks if you prefer runny eggs.
- Final bake: Return the dishes to the oven and bake for an additional 10 minutes. The eggs should be set but still slightly soft in the center, providing that perfect creaminess.
