  • 2 lbs chicken breasts: Cubed; the star of the dish, chicken breasts provide a lean source of protein that absorbs the marinade and complements the flavors of the sauce.
  • 1 tbsp olive oil: Used to coat the chicken and enhance its moisture during cooking, olive oil adds a healthy fat component to the dish.
  • Spices:
    • 1 tsp paprika: Provides color and a mild smoky flavor.
    • 1 tsp garlic powder: Adds depth of flavor and aroma.
    • Salt and pepper: Essential for seasoning, ensuring that the chicken is well flavored.
  • Bang Bang Sauce:
    • 1.25 cups mayonnaise: Acts as the creamy base for the sauce.
    • 2/3 cup Thai sweet chili sauce: Adds sweetness and a subtle heat, characteristic of Thai cuisine.
    • Sriracha: To taste; introduces an extra kick of spice.
    • 1 tbsp honey: Balances the heat of the Sriracha with its sweetness.

Instructions

  1. Prepare the Chicken: In a large bowl, combine 2 lbs of cubed chicken breasts with 1 tbsp of olive oil, 1 tsp of paprika, 1 tsp of garlic powder, and salt and pepper to taste. Mix until the chicken is evenly coated with the oil and spices.
  2. Skewer the Chicken: Thread the seasoned chicken pieces onto wooden skewers. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning on the grill or in the air fryer.
  3. Make the Bang Bang Sauce: In a separate bowl, mix together 1.25 cups of mayonnaise, 2/3 cup of Thai sweet chili sauce, Sriracha to taste, and 1 tbsp of honey. Stir well until the mixture is smooth. Reserve half of this sauce for drizzling after cooking.
  4. Cook the Skewers: Preheat your air fryer to 400°F (200°C). Lightly brush the skewers with a bit of the Bang Bang sauce that was not reserved. Place the skewers in the air fryer and cook for 11-12 minutes, turning halfway, until the chicken reaches an internal temperature of 165°F (73.9°C).
  5. Serve: Once cooked, remove the skewers from the air fryer and drizzle with the reserved Bang Bang sauce for an extra burst of flavor. Serve hot and enjoy!
