  • Cherry compote: 1 cup – Made from fresh or frozen cherries, this sweet topping adds a burst of flavor. (To make your compote, simmer pitted cherries with 1/2 cup of sugar and 1 tablespoon of lemon juice until thickened.)
  • Puff pastry: 1 sheet (thawed) – Provides a flaky, buttery shell that enhances the texture contrast in each bite.
  • Egg wash: 1 egg (beaten with 1 tablespoon of water) – This gives the pastry a beautiful golden brown color when baked.
  • Fresh basil or mint leaves: for garnish optional – Adds a touch of freshness and color to the dish.

Instructions

  1. Preheat the oven: Begin by preheating your oven to 400°F (200°C). This ensures the pastries will bake evenly.
  2. Prepare the puff pastry: Roll out the thawed puff pastry on a lightly floured surface. Cut it into 2-inch squares. You will need about 12 squares for 12 bites.
  3. Place the Brie: Cut the Brie cheese into small cubes, approximately 1 inch in size. Place one cube at the center of each pastry square.
  4. Add the cherry compote: Spoon about 1 tablespoon of cherry compote over the Brie on each pastry square, ensuring it covers the cheese well.
  5. Seal the bites: Fold the corners of the pastry squares over the filling to create a little package. Press the edges firmly to seal. You can also crimp the edges with a fork for a decorative touch.
  6. Apply the egg wash: Brush the tops of each pastry with the egg wash to allow them to develop a beautiful golden color during baking.
