Burrata Bruschetta with Cherry Tomatoes & Basil: creamy burrata, sweet tomatoes, and fresh basil on toasted bread. A perfect, fresh appetizer.

- 1 baguette or ciabatta bread, sliced into 1-inch thick pieces (about 12 slices)
- 8 ounces of burrata cheese
- 2 cups of cherry tomatoes, halved
- 1/4 cup of fresh basil leaves, torn
- 2 tablespoons of extra virgin olive oil, plus more for drizzling
- 1 clove of garlic, peeled and halved
- Salt and freshly ground black pepper to taste
Instructions
- Preheat the oven: Begin by preheating your oven to 400°F (200°C).
- Prepare the bread: Arrange the sliced baguette or ciabatta on a baking sheet. Use a brush to lightly coat each slice with olive oil.
- Toast the bread: Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until it is golden brown. Keep an eye on it to avoid burning.
- Add garlic: Once the bread is toasted, remove it from the oven. While still warm, rub the cut side of the garlic clove on each slice to impart a subtle garlic flavor.
- Prepare the topping: In a mixing bowl, combine the halved cherry tomatoes, torn basil, 2 tablespoons of olive oil, salt, and pepper. Stir gently to combine, ensuring the tomatoes are well coated.
- Assemble the bruschetta: On each toasted bread slice, spoon a generous amount of the cherry tomato mixture on top. Then, tear the burrata cheese and place it over the tomatoes, allowing the creamy center to spill over the sides.
- Drizzle and serve: Finish with an extra drizzle of olive oil and additional salt and pepper to taste. Serve immediately while the bread is still warm.
