  2. Prepare the sweet potatoes: Take 2 large sweet potatoes, peel them, and dice them into bite-sized chunks. Place the diced sweet potatoes in a mixing bowl and drizzle with 1 tablespoon of olive oil. Toss until all pieces are well-coated. Spread them out in a single layer on the prepared baking sheet. Roast for 20-25 minutes or until tender, flipping halfway through for even cooking.
  3. Cook the turkey bacon: In a separate pan, cook 12–16 strips of turkey bacon over medium heat for 5-6 minutes or until pliable but not fully crisp. Drain on paper towels to remove excess grease. This step ensures that the bacon will wrap easily around the sweet potatoes.
  4. Skewer the ingredients: Once the sweet potatoes are roasted, it’s time to assemble the skewers. Take a soaked wooden skewer and start by skewering a sweet potato chunk, followed by wrapping a piece of turkey bacon around it, alternating until the skewer is full. Aim for about 4-5 sweet potato pieces per skewer.
  5. Season the skewers: In a small bowl, mix together ½ cup of brown sugar and 1 teaspoon of cinnamon. Sprinkle this mixture generously over the skewers, ensuring that all sides are evenly coated.
