Carnitas-Stuffed Baked Chicken

Delicious carnitas-stuffed baked chicken, filled with tender pork and spices. A hearty main dish that’s perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups cooked turkey bacon carnitas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • Fresh cilantro and lime wedges for garnish (optional)

Instructions

  1. Preheat your Oven: Set your oven to 375°F (190°C) to ensure it’s hot and ready.
  2. Prepare the Chicken Breasts: Take the 4 boneless, skinless chicken breasts and carefully cut pockets into the side of each one. Season both sides of the chicken with salt, pepper, 1 tsp garlic powder, 1 tsp paprika, and 1/2 tsp cumin to enhance the flavor.
  3. Stuff the Chicken: Fill each pocket with 1 1/2 cups of cooked turkey bacon carnitas and 1 cup of shredded cheddar or Monterey Jack cheese. If necessary, use toothpicks to secure the openings.
  4. Sear the Chicken: Heat 2 tbsp of olive oil in a large skillet over medium heat. Place the stuffed chicken breasts into the skillet and sear for 2-3 minutes on each side or until they reach a golden brown color.
  5. Bake: Transfer the seared chicken to a baking dish and bake in the preheated oven for about 20-25 minutes. The chicken is cooked through when it reaches an internal temperature of 165°F (75°C).
  6. Garnish and Serve: Once cooked, remove any toothpicks and sprinkle freshly chopped cilantro on top. Serve with lime wedges alongside rice, beans, or a fresh salad.
