- Prepare the Chicken: Start by seasoning 4 boneless skinless chicken breasts (1.5 pounds) with salt and pepper to taste. This simple step enhances the chicken’s natural flavors. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breasts in the skillet.Cook the chicken for about 4-5 minutes on each side, or until they turn golden brown and are cooked through (internal temperature should reach 165°F). Once cooked, transfer the chicken to a plate and set it aside to rest.
- Sauté the Mushrooms: In the same skillet, reduce the heat to medium and add 1 tablespoon of unsalted butter. Allow the butter to melt and bubble gently. Next, add 8 ounces of sliced mushrooms to the skillet. Sauté the mushrooms for about 5 minutes or until they are browned and tender. Stir occasionally to ensure even cooking.
- Add Aromatics: With the mushrooms ready, add 2 minced garlic cloves, 1 teaspoon of dried thyme, and 1/2 teaspoon of dried oregano to the skillet. Stir everything together and cook for another 1-2 minutes, until the garlic becomes fragrant.
