  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 12 ounces cooked buttered noodles (egg noodles or your favorite type)
  • Chopped fresh parsley for garnish
  • Grated Parmesan cheese for garnish

Instructions

  1. Prepare the Chicken: Start by seasoning 4 boneless skinless chicken breasts (1.5 pounds) with salt and pepper to taste. This simple step enhances the chicken’s natural flavors. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, carefully place the chicken breasts in the skillet.Cook the chicken for about 4-5 minutes on each side, or until they turn golden brown and are cooked through (internal temperature should reach 165°F). Once cooked, transfer the chicken to a plate and set it aside to rest.
  2. Sauté the Mushrooms: In the same skillet, reduce the heat to medium and add 1 tablespoon of unsalted butter. Allow the butter to melt and bubble gently. Next, add 8 ounces of sliced mushrooms to the skillet. Sauté the mushrooms for about 5 minutes or until they are browned and tender. Stir occasionally to ensure even cooking.
  3. Add Aromatics: With the mushrooms ready, add 2 minced garlic cloves, 1 teaspoon of dried thyme, and 1/2 teaspoon of dried oregano to the skillet. Stir everything together and cook for another 1-2 minutes, until the garlic becomes fragrant.
  4. Make the Sauce: Pour in 1 cup of chicken broth, scraping the bottom of the skillet to release any flavorful brown bits. Bring the mixture to a simmer and let it reduce by half, which should take about 5 minutes. This step enhances the depth of flavor in the sauce.
  5. Finish the Dish: Once the broth is reduced, stir in 1 cup of heavy cream. Allow the cream to simmer for an additional 3-4 minutes or until it thickens slightly. This creamy sauce will coat the noodles beautifully.
  6. Combine with Noodles: If you haven’t done so already, prepare 12 ounces of buttered noodles according to package instructions. Once cooked, drain the noodles and add them directly to the skillet with the sauce. Toss to coat the noodles evenly.
