Savor this creamy pepperoncini chicken skillet! Quick and flavorful, it’s a perfect one-pan dish for busy weeknights and delicious family dinners.

Ingredients

Scale
  • 2 tbsp butter: This adds richness and a sautéing medium for the chicken and vegetables.
  • 2 lbs chicken strips: You can use boneless chicken breasts or thighs. The chicken serves as the protein base for the dish.
  • 1 tsp sea salt: Essential for seasoning the chicken and enhancing its natural flavors.
  • 1 tsp ground pepper: Provides a touch of spice to the dish.
  • 1 diced white onion: Adds sweetness and depth to the flavor profile.
  • 2 tbsp diced garlic: Infuses the dish with a rich, aromatic flavor.
  • ½ cup chicken stock: Enhances the overall taste of the sauce and adds moisture.
  • ½ cup sliced roasted red pepper: Contributes a sweet and slightly smoky flavor.
  • 1 cup heavy cream: This is crucial for creating the creamy sauce that coats the chicken.
  • ½ cup shredded parmesan: Adds a nutty flavor and creaminess to the dish.
  • 1 tbsp Italian seasoning: A blend of herbs that delivers a classic Italian flavor.
  • ½ cup sliced pepperoncini: These tangy peppers provide a unique kick and brightness to the dish.

Instructions

  1. Step 1: In a large pan, melt 2 tablespoons of butter over medium-high heat.
  2. Step 2: Season 2 pounds of chicken strips with 1 teaspoon of sea salt and 1 teaspoon of ground pepper. Add the chicken to the pan and brown on all sides for about 8 minutes. Once browned, remove the chicken from the pan and set it aside.
  3. Step 3: In the same pan, add 2 tablespoons of diced garlic and 1 diced white onion. Sauté for approximately 5 minutes, or until the mixture turns golden.
  4. Step 4: Pour in ½ cup of chicken stock and add ½ cup of sliced roasted red pepper. Allow it to reduce for about 5 minutes, or until the liquid has reduced by half.
  5. Step 5: Stir in 1 cup of heavy cream and ½ cup of shredded parmesan. Whisk to combine until the sauce is smooth.
  6. Step 6: Return the heat to medium-low and add 1 tablespoon of Italian seasoning, ½ cup of sliced pepperoncini, and the browned chicken back into the pan. Simmer until the chicken is cooked through, about 10-15 minutes.
  7. Step 7: Once everything is combined and heated through, remove from heat. Serve over steamed vegetables, pasta, or rice, or enjoy it solo!
