  • 1 pound ground chicken
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, for cooking
  • 1 cup heavy cream
  • 1 cup Alfredo sauce (store-bought or homemade)
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large mixing bowl, combine:
    • 1 pound ground chicken
    • 1 cup fresh spinach, finely chopped
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 2 cloves garlic, minced
    • 1 teaspoon Italian seasoning
    • Salt and pepper, to taste

    Mix everything together using your hands or a spoon until all the ingredients are well incorporated.

  2. Preheat a large skillet over medium heat and add 2 tablespoons of olive oil.
  3. Shape the mixture into small meatballs, about 1 inch in diameter.Once the skillet is hot, add the meatballs, ensuring not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are golden brown on all sides and cooked through.
  4. While the meatballs are cooking, prepare the creamy Alfredo sauce.In a separate saucepan over medium heat, combine:
    • 1 cup heavy cream
    • 1 cup Alfredo sauce (store-bought or homemade)

    Stir frequently until the sauce is heated through and slightly thickened, approximately 5 minutes.

  5. Once the meatballs are cooked, remove them from the skillet and drain any excess oil. Add the cooked meatballs to the Alfredo sauce, gently coating them and allowing it to simmer for an additional 2-3 minutes.
  6. Serve immediately, garnished with fresh parsley if desired, over cooked pasta or on their own!
