- 1 pound of fresh salmon fillet, skin removed
- 1 cup of seasoned breadcrumbs
- 1/2 cup of all-purpose flour (or gluten-free flour for a gluten-free option)
- 2 large eggs, beaten
- 2 tablespoons of fresh parsley, chopped
- 2 tablespoons of lemon juice
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Vegetable oil for frying

- Prepare the salmon: Start by cutting the salmon fillet into bite-sized pieces, approximately 1-inch cubes. This size is perfect for easy frying and serving. Set aside.
- Set up your dredging station: In three shallow bowls, place the seasoned breadcrumbs in one, the flour in another, and the beaten eggs in the third.
- Flavor the salmon: In a large mixing bowl, combine the chopped fresh parsley, lemon juice, garlic powder, onion powder, salt, and pepper. Add the salmon cubes to the bowl and gently toss to coat the salmon evenly with the mixture.
- Dredging the salmon: Take each cube of coated salmon and first dip it in the flour, ensuring it’s fully coated. Shake off any excess flour, then dip the piece into the beaten egg, allowing any excess to drip off. Finally, coat the salmon in the seasoned breadcrumbs, pressing lightly to adhere.
- Fry the salmon bites: In a large skillet, add about 1/4 inch of vegetable oil and heat over medium-high heat. Once the oil is hot, carefully add the salmon bites in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes per side, or until golden brown and crispy. Use a slotted spoon to transfer the bites to a paper towel-lined plate to drain excess oil.
- Cooling and serving: Let the bites cool for a few minutes before serving. They are best enjoyed warm with your favorite dipping sauce on the side.
