Instructions

  1. Prepare the Potatoes: Start by peeling and cutting 2 large russet potatoes into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.
  2. Mash the Potatoes: Drain the potatoes and return them to the pot. Mash the potatoes until smooth and free of lumps. Allow them to cool slightly.
  3. Add the Cheese and Spices: Mix in 1 cup shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, 2 teaspoons garlic powder, 1 teaspoon paprika, salt, and pepper to taste into the mashed potatoes. Stir until everything is well combined.
  4. Shape the Sticks: Take small portions of the potato mixture and shape them into sticks, about 3 inches long and 1 inch thick. Place them on a parchment-lined baking sheet.
  5. Prepare the Coating: In one bowl, place 1/2 cup all-purpose flour. In a second bowl, whisk 2 large eggs. In a third bowl, add 1 cup breadcrumbs.
  6. Coat the Sticks: Dredge each potato stick in flour, tapping off the excess. Dip it into the egg, ensuring it is fully coated, and then roll it in the breadcrumbs until evenly coated. Repeat until all sticks are coated.
