Description

Crispy Hot Honey Feta Chicken: A tangy, spicy-sweet main dish with golden breaded chicken, creamy feta, and a drizzle of hot honey. Perfect for dinner.

Ingredients

  • Honey (1/3 cup / 110g): This not only adds sweetness but also creates a sticky glaze that clings to the chicken.
  • Hot Sauce (1 1/2 tsp): The heat element, contributing a spicy kick that complements the dish’s sweetness.
  • Chilli Flakes (3/4 tsp): Enhances the overall spiciness and adds texture.
  • Chicken Breasts (2 x 250g/9oz): The star of the dish, providing a juicy and tender protein base.
  • Paprika (2 tsp): Adds a mild warmth and depth of flavor, along with a vibrant color.
  • Salt (1 tsp): Essential for enhancing all the flavors of the dish.
  • Onion Powder (1/2 tsp), Garlic Powder (1/2 tsp), Dried Oregano (1/2 tsp), Black Pepper (1/2 tsp): These spices create a fragrant seasoning blend that coats the chicken.
  • Cayenne Pepper (1/4 tsp): Provides an extra kick of heat, balancing the sweetness of the honey.
  • Plain Flour (35g / 1/4 cup): Forms the first coating on the chicken, creating a crisp texture when fried.
  • Eggs (2, beaten): Acts as a binding agent to adhere the breadcrumbs and flour to the chicken.
  • Panko Breadcrumbs (65g / 1 cup): The key to achieving a crispy outer layer that elevates the chicken.
  • Vegetable Oil (as needed, about 6-8 tbsp): Required for frying the chicken to a beautiful golden brown.
  • Feta (200g / 7oz, crumbled): The creamy and tangy topping that transforms the fried chicken into a gourmet dish.

Instructions

  1. Prepare the Hot Honey Sauce: In a bowl, mix together 1/3 cup (110g) of honey, 1 1/2 teaspoons of hot sauce, and 3/4 teaspoon of chili flakes. Heat this mixture in the microwave for 20 seconds or on the stovetop until it begins to simmer. Allow it to cool before using.
  2. Slice the Chicken: Take the 2 chicken breasts (250g each) and slice them in half horizontally, yielding 4 thinner pieces for even cooking.
  3. Season the Chicken: In a small bowl, combine 2 teaspoons of paprika, 1 teaspoon of salt, 1/2 teaspoon each of onion powder, garlic powder, dried oregano, and black pepper, and 1/4 teaspoon of cayenne pepper. This seasoning mix will add depth to the chicken.
  4. Set Up the Dredging Stations: Prepare three shallow dishes: one with 1/4 cup (35g) of plain flour mixed with half of the seasoning, another with 2 beaten eggs, and the last with 1 cup (65g) of panko breadcrumbs mixed with the remaining seasoning.
  5. Dredge the Chicken: Take each piece of chicken and dredge it first in the flour mixture, then the beaten egg, and finally coat it in the panko breadcrumbs. Ensure each piece is thoroughly covered for maximum crunch.
  6. Fry the Chicken: In a large frying pan, heat 6-8 tablespoons of vegetable oil over medium-high heat. Carefully place the chicken pieces in the pan and fry for about 3-4 minutes on each side, until they are golden brown and crispy. Once cooked, place them on a wire rack to cool slightly.
  7. Grill the Feta: Once the chicken has cooled slightly, top each piece with crumbled feta (200g). Place the chicken under a grill (broiler) until the feta is golden and soft, which should take about 3-5 minutes.
  8. Serve with Hot Honey: Drizzle your desired amount of prepared hot honey sauce over the layered feta and chicken, then enjoy this delicious dish!
