These crispy Parmesan Zucchini Fries are a healthy alternative to traditional fries, oven-baked until golden and served with ranch dressing.

  • 2 eggs
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 2 cups Japanese panko bread crumbs
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat the eggs with salt and black pepper. On a large plate or container, mix the panko breadcrumbs with Parmesan cheese.
