Decadent Strawberry Truffle Brownies feature rich, fudgy chocolate brownies topped with a luscious strawberry-infused truffle layer and smooth ganache.

Ingredients

Scale
  • For the Brownie Base:
    • ½ cup unsalted butter
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ½ cup all-purpose flour
    • ⅓ cup cocoa powder
    • ¼ teaspoon salt
  • For the Strawberry Truffle Layer:
    • 1 cup strawberries (pureed)
    • 8 ounces white chocolate
    • ¼ cup heavy cream
    • 2 tablespoons unsalted butter
  • For the Ganache Topping:
    • 4 ounces semisweet chocolate
    • ¼ cup heavy cream
    • Fresh strawberry slices or sprinkles (optional)

Instructions

  1. Prepare the Brownie Base: Begin by preheating your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, ensuring that the sides are also covered for easier removal later. In a medium saucepan, melt ½ cup of unsalted butter over low heat. Once melted, remove from heat and stir in 1 cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract until well combined. Sift in ½ cup all-purpose flour, ⅓ cup cocoa powder, and ¼ teaspoon salt, mixing until just combined. Pour the batter into the prepared pan and bake for 25-30 minutes or until the edges are set and a toothpick inserted in the center comes out mostly clean. Allow the brownies to cool in the pan.
  2. Make the Strawberry Truffle Layer: While the brownie base cools, prepare the strawberry truffle layer. Start by pureeing 1 cup of fresh strawberries in a blender or food processor until smooth. In a separate saucepan, melt 8 ounces of white chocolate, ¼ cup of heavy cream, and 2 tablespoons of unsalted butter over low heat, stirring until smooth. Once melted, mix in the strawberry puree, ensuring everything is well combined. Spread this luscious strawberry mixture over the cooled brownies, smoothing it into an even layer. Cover and chill the brownies in the refrigerator for at least 1 hour until the truffle layer is set.
  3. Prepare the Ganache: For the ganache topping, heat ¼ cup of heavy cream in a saucepan until it begins to simmer. Remove it from heat and pour it over 4 ounces of chopped semisweet chocolate. Let it sit for a minute, allowing the chocolate to melt, then stir until the mixture is smooth and glossy. Once the truffle layer is firm, pour the ganache over the truffle layer, spreading it gently to cover evenly. Chill again until set, which should take about 30 minutes.
  4. Slice and Serve: After your brownies have set, remove them from the pan using the parchment paper. Transfer to a cutting board and, using a sharp knife, cut them into squares. Wipe the knife with a damp cloth between cuts to keep the pieces clean and neat. For a lovely presentation, garnish each square with fresh strawberry slices or colorful sprinkles if desired. Enjoy your beautiful creation and watch as everyone falls in love with this decadent treat!
