Try savory Broccoli and Feta Brownie Bars with a delicious blend of broccoli, feta, mozzarella, and herbs for a unique, healthy side dish.

Ingredients

Scale
  • 7 oz broccoli florets: Provides a nutritious base rich in vitamins, particularly vitamin C and fiber.
  • 1 tsp oil: Used for sautéing scallions, enhancing flavor.
  • 4 diced scallions: Contributes a mild onion flavor and added texture.
  • 3 tbsp fresh dill: Offers a refreshing herbal note that complements the cheeses.
  • 1¼ cup flour: The base ingredient that gives structure to the bars.
  • 1 tsp baking powder: Acts as a leavening agent to create a light texture.
  • 1 tsp salt: Enhances overall flavors.
  • 1 cup milk: Adds moisture and richness to the batter.
  • 2 lightly beaten eggs: Act as a binding agent, helping the ingredients to hold together.
  • ¼ cup olive oil: Integrates healthy fat, adding moistness and flavor.
  • 4 oz feta cheese (crumbled): Provides a savory, tangy kick that pairs beautifully with broccoli.
  • 4 oz mozzarella cheese: Contributes creaminess and helps bind the bars.
  • 3 tbsp grated pecorino cheese: Adds a sharp, salty flavor that enhances the dish when sprinkled on top.

Instructions

  1. Preheat your oven: Set your oven to 375°F (190°C) and lightly spray a 10½ x 7½” baking dish with olive oil to prevent the bars from sticking.
  2. Prepare the broccoli: Boil water in a pot, then add the 7 oz of broccoli florets and 1 tsp of salt. Blanch the broccoli for about 1 minute, then chop it roughly and set it aside.
  3. Sauté the scallions: In a skillet, heat 1 tsp of olive oil over medium heat. Add the 4 diced scallions and sauté for about 1 minute until soft. Remove from heat and set aside.
  4. Mix the dry ingredients: In a large mixing bowl, combine 1¼ cup of flour, 1 tsp of baking powder, and 1 tsp of salt. Stir the mixture well to ensure an even distribution of the leavening agent.
  5. Add wet ingredients: Add 1 cup of milk, 2 lightly beaten eggs, and ¼ cup of olive oil to the dry ingredients. Stir until the mixture thickens and forms a batter.
  6. Incorporate the fillings: Gently fold in the crumbled 4 oz of feta cheese, 4 oz of mozzarella cheese, the chopped broccoli, sautéed scallions, and 3 tbsp of fresh dill into the batter. Make sure everything is evenly combined.
  7. Prepare for baking: Transfer the mixture into the prepared baking dish, spreading it evenly. Sprinkle 3 tbsp of grated pecorino cheese on top and feel free to lightly spray it again with olive oil for extra browning.
  8. Bake: Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Cooling: After baking, let the bars cool in the pan for about 10 minutes before slicing them into squares or rectangles. Serve warm or at room temperature!
