Description
Delicious cheesy potato burritos: Creamy mashed potatoes, melted cheese, and seasonings wrapped in a soft tortilla for a satisfying main dish.
Ingredients
Scale
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 can (15 oz) black beans, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon cumin
- A pinch of chili powder
- Salt and pepper to taste
- 8 large flour tortillas
- 1 cup salsa (for topping)
- Fresh cilantro (for garnish)
Instructions
- Prepare the Potatoes: Start by peeling and dicing 4 large potatoes. Place them in a pot of salted water and bring to a boil. Cook until they are tender, approximately 15-20 minutes.
- Make the Filling: Drain the cooked potatoes and return them to the pot. Mash the potatoes slightly, leaving some bits for texture. In a large bowl, combine the mashed potatoes with 1 cup shredded cheddar cheese, 1/2 cup sour cream, 1/4 cup chopped green onions, and the rinsed 1 can of black beans. Add 1 tablespoon olive oil, 1 teaspoon cumin, a pinch of chili powder, and season with salt and pepper to taste. Mix well until everything is combined and creamy.
- Prepare the Tortillas: In a separate pan, warm 8 large flour tortillas on low heat for about 30 seconds per side. This step makes them easier to roll without tearing.
- Assemble the Burritos: Lay a warm tortilla flat on your workspace. Add a generous portion of the creamy potato filling in the center. Fold in the sides and roll the tortilla from the bottom to the top, ensuring the filling is secure inside. Repeat this process for the remaining tortillas.
- Bake the Burritos: Preheat your oven to 375°F (190°C). Place the assembled burritos in a baking dish. Pour 1 cup of salsa evenly over the top of the burritos, ensuring each one is coated. Bake for 20-25 minutes or until the salsa is bubbling and the tortillas are golden.
- Finish and Serve: Once baked, remove the burritos from the oven. Garnish with fresh cilantro before serving. Allow them to cool slightly, then cut in half and enjoy!
