- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 teaspoon cinnamon

- Preheat your oven: Start by preheating your oven to 350°F (175°C). When it reaches the desired temperature, line a baking sheet with parchment paper to prevent sticking.
- Melt the butter: In a saucepan over low heat, melt 1/4 cup butter (or dairy-free substitute) alongside 1/2 cup honey until smooth. Stir frequently to avoid burning.
- Add flavorings: Once melted, stir in 1 teaspoon vanilla extract and 1 teaspoon cinnamon. Mix thoroughly, allowing the flavors to meld.
- Combine dry ingredients: In a large mixing bowl, combine 2 cups mixed nuts, 1 cup dried fruits, 1 cup semi-sweet chocolate chips, 1 cup shredded coconut, 1 cup rolled oats, and 1/2 teaspoon salt. Stir well to ensure an even distribution of ingredients.
- Pour wet into dry: Gradually pour the melted butter and honey mixture over the dry ingredients, mixing well to combine. The mixture should be sticky but cohesive.
- Shape the rocks: Using your hands, scoop out a portion of the mixture and form it into balls or rocks, about 1 inch in size. Place them on the prepared baking sheet, leaving some space in between to allow for expansion.
- Bake the rocks: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until they turn golden brown. Be careful not to overbake, as they can become hard.
