    • 1 ½ cups all-purpose flour
    • 2 tbsp granulated sugar
    • 1 ½ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • 1 large egg
    • 1 cup buttermilk
    • 2 tbsp melted butter
    • 1 tsp vanilla extract
    • 2 tbsp maple syrup
  • Fillings:
    • ½ cup cooked turkey bacon (or chicken), crumbled
    • ½ cup scrambled eggs (about 2 large eggs)
    • ½ cup shredded cheddar cheese (optional)
  • Maple Syrup Glaze (Optional):
    • ½ cup powdered sugar
    • 2 tbsp maple syrup
    • 1 tbsp milk

Instructions

  1. Prepare the Fillings: In a skillet over medium heat, cook ½ cup of crumbled turkey bacon until browned and crispy. Set it aside. Next, scramble 2 large eggs until fluffy, then break them into small pieces.
  2. Make the Pancake Batter: In a large mixing bowl, combine 1 ½ cups all-purpose flour, 2 tbsp granulated sugar, 1 ½ tsp baking powder, ½ tsp baking soda, and ½ tsp salt. In a separate bowl, mix together 1 large egg, 1 cup buttermilk, 2 tbsp melted butter, 1 tsp vanilla extract, and 2 tbsp maple syrup. Pour the wet ingredients into the dry ingredients and gently combine without overmixing. This will ensure light and fluffy bites!
  3. Assemble the Bites: Preheat your oven to 375°F (190°C) and grease a mini muffin tin. Fill each muffin cup halfway with pancake batter. Add a layer of ½ cup of crumbled turkey bacon, followed by ½ cup of scrambled eggs and shredded cheddar cheese if desired. Finally, cover with more pancake batter until each cup is full.
  4. Bake: Place the muffin tin in the oven and bake for 12-15 minutes, or until the bites are golden brown and a toothpick inserted into the center comes out clean. Allow them to cool in the pan for 5 minutes before transferring them to a wire rack.
  5. Make the Glaze (Optional): If you want to add an extra layer of sweetness, whisk together ½ cup powdered sugar, 2 tbsp maple syrup, and 1 tbsp milk until smooth. Drizzle this glaze over the warm McGriddle Bites.
