Ingredients

Scale
  • 450g firm tofu: The backbone of this recipe, tofu serves as a fantastic source of plant-based protein and provides a great texture.
  • 1/4 red onion (finely chopped): Adds a mild sweetness and depth of flavor that complements the other ingredients well.
  • 3 garlic cloves (minced): Garlic is essential in almost every cuisine. Its pungent flavor enhances the dish remarkably.
  • 1 1/2 tsp cumin: This spice brings a warm, earthy flavor that transports you straight to the Middle East.
  • 1 1/2 tsp coriander: Adding a citrusy note, coriander balances the flavors perfectly.
  • 1 tsp sumac: With its tangy flavor, sumac brightens the overall taste of the kebabs.
  • 1 tsp dried mint: This herb lends a refreshing hint that enhances the Middle Eastern flavor profile.
  • 1/2 tsp turmeric: Known for its vibrant color, turmeric also brings a mild, bitter flavor and numerous health benefits.
  • 1/2 tsp chili powder: Just a dash adds a little heat, making the kebabs exciting.
  • 1/21 tsp salt: Essential for enhancing all other flavors.
  • 1/4 tsp black pepper: Adds a mild kick to the dish.
  • 3 tbsp tomato puree: Introduces richness and depth while helping the ingredients bind together.
  • 65g plain or chickpea flour: Acts as a binder and enhances the texture of the kebabs.
  • 15g fresh parsley (finely chopped): Adds a touch of freshness and color to the dish.
  • 15g fresh coriander (finely chopped): Brightens the flavors and adds a delightful aroma.
  • Oil for frying: Essential for crisping up the kebabs and providing a tasty outer layer.

Instructions

  1. Prepare the Tofu: Start by breaking the 450g firm tofu into small pieces and placing them in a large mixing bowl. This is the first step to achieving a good texture. Be gentle, so you don’t end up with mushy tofu.
  2. Combine Ingredients: Add the chopped 1/4 red onion, 3 minced garlic cloves, 1 1/2 tsp cumin, 1 1/2 tsp coriander, 1 tsp sumac, 1 tsp dried mint, 1/2 tsp turmeric, 1/2 tsp chili powder, 1/2-1 tsp salt, and 1/4 tsp black pepper to the bowl. Each of these spices brings its personality and enhances your kebabs.
  3. Mash Until Combined: Using a fork or your hands, mash the mixture together until it holds together well. This should take a few minutes. The mixture should be firm enough to shape without falling apart.
  4. Shape the Kebabs: Form the mixture into mini kebabs or small patties. Aim for about 12 pieces to ensure even cooking and delightful portions.
  5. Heat the Oil: In a frying pan, add oil and heat it over medium heat. Wait until the oil is hot enough; you can test it by dropping a small piece of the mixture into the pan—if it sizzles, it’s ready!
  6. Fry the Kebabs: Gently place the shaped kebabs in the pan. Fry for about a minute on each side, or until they are golden brown. Be careful not to overcrowd the pan, as this can reduce the heat and lead to steaming instead of frying.
  7. Serve: Once the kebabs are nicely browned, remove them from the pan and place them on a paper towel to absorb excess oil. Serve your kebabs with rice, pitta bread, a fresh garden salad, and hummus or tahini sauce for a delightful meal.
