Description

Discover easy and delicious potato cakes with crispy exteriors and fluffy interiors. Perfect as appetizers or sides for any meal.

Ingredients

Scale
  • 4 large potatoes: The base of our dish, providing a creamy and hearty texture once mashed. Russet potatoes are an excellent choice due to their high starch content.
  • 1 cup shredded cheese (cheddar or your choice): Cheese not only adds flavor but also helps bind the mixture together. Choose your favorite cheese or a blend for a unique taste.
  • 1/2 cup diced green onions: These add a fresh crunch and a mild onion flavor, enhancing both color and taste.
  • 1/4 cup all-purpose flour: This ingredient is crucial for providing structure to the patties and keeping them from falling apart while cooking.
  • 1 egg: The egg acts as a binding agent, ensuring that the mixture holds together during frying.
  • Salt and pepper to taste: Essential for bringing out the natural flavors of the potatoes and cheese.
  • Oil for frying: Choose a neutral oil with a high smoke point, such as vegetable or canola oil, for frying to achieve a crispy texture on the outside.

Instructions

  1. Boil the potatoes: Start by taking 4 large potatoes, wash and peel them. Place the potatoes in a large pot filled with water and add a pinch of salt. Bring the water to a boil and cook until the potatoes are soft enough to be pierced with a fork, roughly 15-20 minutes. Drain the water and allow them to cool.
  2. Mash the potatoes: Once cooled, peel the potatoes if you haven’t yet, and transfer them to a mixing bowl. Mash them until smooth, without any lumps. This creates a creamy base for your cakes.
  3. Mix in the ingredients: To the mashed potatoes, add 1 cup of shredded cheese, 1/2 cup of diced green onions, 1/4 cup of all-purpose flour, and 1 egg. Season with salt and pepper to taste. Mix everything together until well combined.
  4. Shape the patties: With damp hands, take portions of the mixture (about 1/4 cup each) and form them into small, oval-shaped patties. Place them on a plate, ready for frying.
  5. Fry the patties: Heat a generous amount of oil in a large frying pan over medium heat. Once hot, carefully add the patties, ensuring they are not overcrowded in the pan. Fry for about 3-4 minutes per side, or until golden brown and crispy. Flip gently with a spatula.
  6. Drain excess oil: After frying, transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.
  7. Serve warm: These potato cakes are best enjoyed warm, straight from the pan. Serve them with a side of your favorite dipping sauce or condiment.
