  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/2 cup milk (or a dairy-free alternative such as almond milk)
  • 1/4 teaspoon vanilla extract
  • Oil for frying (vegetable or coconut oil work well)
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the Bananas: In a mixing bowl, mash 3 ripe bananas until smooth. Aim for a creamy consistency with minimal lumps, as this will help integrate the bananas into the batter evenly.
  2. Make the Batter: To the mashed bananas, add 1 cup of all-purpose flour, 1/4 cup of granulated sugar, 1 teaspoon of baking powder, 1/2 teaspoon of ground cinnamon (if using), and 1/4 teaspoon of salt. Mix these dry ingredients gently with a spatula.
  3. Add Wet Ingredients: Pour in 1/2 cup of milk and 1/4 teaspoon of vanilla extract to the dry mixture. Stir until combined, but do not overmix; a few lumps are perfectly fine.
  4. Heat the Oil: In a deep frying pan, heat about 2 inches of oil over medium heat. Test the oil’s readiness by dropping a small spoonful of batter into the oil; if it sizzles and rises to the surface, it’s ready for frying.
  5. Fry the Fritters: Using a spoon or small ice cream scoop, carefully drop spoonfuls of batter into the hot oil, leaving space between each fritter. Fry them in batches, cooking for about 2-3 minutes on each side or until they are golden brown.
  6. Drain and Serve: Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil. For an added touch, dust them with powdered sugar before serving.
