Combine the rinsed sushi rice with 1 ¼ cups of water in a pot. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes. Once the time is up, remove the pot from the heat and let it sit, still covered, for an additional 10 minutes. In a separate bowl, mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and ½ teaspoon of salt. Once the rice has cooled slightly, gently fold this mixture into the rice to season it.
  2. Make the Nori Taco Shells: Preheat your oven to 300°F (150°C). In a medium bowl, whisk together ½ cup of all-purpose flour, ½ cup of water, and 1 teaspoon of sesame oil until smooth. Take the 8 nori sheets and brush one side with the batter. Fold each sheet in half, then shape it over the oven racks or a baking sheet to create a taco shell form. Bake in the preheated oven for 10 minutes or until the nori shells are crisp.
  3. Prepare the Fillings: While the nori is baking, take 200g of sushi-grade tuna or salmon and dice it into small cubes. In a bowl, toss the diced fish with 2 tablespoons of soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of sriracha if you prefer some heat. Julienne 1 cucumber and 1 carrot, and slice 1 avocado for assembly.
  4. Assemble the Sushi Tacos: Once the nori shells are cool and crisp, it’s time to assemble your tacos! Start by placing a generous scoop of the seasoned sushi rice in each shell. Follow this with the marinated fish, then add the sliced avocado, julienned cucumber, and carrot.
