- 1 teaspoon vanilla extract: Adds a warm, aromatic flavor that enhances the chocolate experience.
- 3 cups quick-cooking oats: Gives the cookies structure and heartiness, making them filling.
- 1 cup chocolate chips: Used for the delicious chocolate coating that encases each cookie.
- 1 cup mint chocolate chips: Provides the refreshing minty flavor that pairs perfectly with the chocolate.
- 1/4 cup heavy cream: Helps to melt the mint chocolate chips smoothly for easy spreading.
- Fresh mint leaves (for garnish): A finishing touch that adds a pop of color and invigorates the mint flavor.
Instructions
- Cookie Base: In a saucepan, melt 1/2 cup unsalted butter over medium heat. Once melted, add 2 cups granulated sugar, 1/2 cup milk, and 1/4 cup unsweetened cocoa powder. Stir the mixture continuously until it comes to a boil. When boiling, let it cook for an additional minute before removing from heat. Immediately mix in 1 teaspoon vanilla extract and 3 cups quick-cooking oats until fully combined.
- Form Cookies: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. Allow them to cool for about 30 minutes until they harden slightly.
- Mint Filling: While the cookie base cools, melt 1 cup mint chocolate chips with 1/4 cup heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until the mixture is smooth and well combined. Once ready, spread a layer of the mint filling over each cooled cookie.
- Chocolate Coating: In another bowl, melt 1 cup chocolate chips using the same microwave method as before. Dip each cookie into the melted chocolate, ensuring they are fully coated. Use a fork to remove them, allowing any excess chocolate to drip back into the bowl.
- Set & Serve: Place the coated cookies back on the parchment-lined sheet and let them set until the chocolate hardens. Once set, garnish with fresh mint leaves to give it a beautiful presentation. Your cookies are ready to be enjoyed!
