  • 8 oz spaghetti: The classic choice for pasta, spaghetti will hold onto the flavors of the garlic and sauce beautifully.
  • 1 lb shrimp (peeled & deveined): Fresh or frozen shrimp can be used; however, quality shrimp will ensure the best flavor and texture.
  • 3 tbsp olive oil: This high-quality oil adds richness and is essential for sautéing the garlic and shrimp.
  • 4 cloves garlic (minced): Fresh garlic is a key player in this dish, providing the aromatic base that elevates the flavor.
  • Optional red pepper flakes: For those who enjoy a little heat, red pepper flakes can be added to taste.
  • 1/4 cup white wine (or chicken broth): This liquid helps deglaze the pan and creates a lovely sauce; choose a wine you would enjoy drinking.
  • 1/4 cup lemon juice: Freshly squeezed lemon juice brightens the dish and balances the richness of the oil and shrimp.

Instructions

  1. Cook the spaghetti: In a large pot of boiling salted water, cook 8 oz of spaghetti according to package instructions until al dente. Once done, drain and set aside.
  2. Prepare the garlic oil: In a large skillet, heat 3 tbsp of olive oil over medium heat. Add 4 minced cloves of garlic and optional red pepper flakes. Sauté for about 1 minute, stirring frequently until fragrant, but be careful not to burn the garlic.
  3. Add the shrimp: Now, add 1 lb of peeled and deveined shrimp to the skillet. Season with salt and pepper to taste, and cook until the shrimp are pink and opaque, about 3-4 minutes, flipping halfway through.
  4. Deglaze the skillet: Pour in 1/4 cup of white wine (or chicken broth) and 1/4 cup of lemon juice. Bring to a simmer, allowing it to cook for an additional 2 minutes until slightly reduced.
  5. Toss the pasta: Add the cooked spaghetti to the skillet with the shrimp mixture. Toss everything together until the spaghetti is well coated with the sauce and shrimp are evenly distributed.
  6. Add finishing touches: Mix in 1/4 cup of chopped fresh parsley and adjust the seasoning if needed. Serve immediately.
