Homemade Cinnabon Cinnamon Rolls

  • Dough:
    • 3/4 cup warm water
    • 2 1/4 tsp active dry yeast
    • 1/2 cup sugar
    • 1 tsp salt
    • 1/4 cup buttermilk
    • 1 large egg
    • 1/3 cup vegetable oil
    • 4 1/25 cups all-purpose flour
  • Filling:
    • 1/2 cup butter (softened)
    • 1 1/4 cups brown sugar
    • 2 1/2 tbsp ground cinnamon
    • 2 tbsp cornstarch
  • Frosting:
    • 2 oz cream cheese (softened)
    • 1/4 cup butter (softened)
    • 1 tsp vanilla extract
    • 1/2 tbsp corn syrup
    • 1 tsp lemon juice
    • 1 1/4 cups powdered sugar

Instructions

  1. Make the Dough:In a large mixing bowl, combine 3/4 cup warm water and 2 1/4 tsp active dry yeast. Stir in 1/2 cup sugar, and let it sit for around 5 minutes, or until it becomes frothy. Next, add 1/4 cup buttermilk, 1 large egg, and 1/3 cup vegetable oil to the mixture. Gradually mix in 4 1/2-5 cups all-purpose flour and 1 tsp salt until a dough forms. Transfer the dough onto a floured surface and knead for about 5 minutes until it’s smooth and elastic.
  2. First Rise:Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
  3. Prepare the Filling:In a bowl, combine 1/2 cup softened butter, 1 1/4 cups brown sugar, 2 1/2 tbsp ground cinnamon, and 2 tbsp cornstarch, mixing well until smooth and creamy.
  4. Filling & Rolling the Dough:After the dough has risen, punch it down and roll it out on a floured surface to a rectangle about 16 x 12 inches. Spread the cinnamon filling evenly over the dough, leaving a small border on the edges. Starting from one end, roll the dough tightly into a log. Once rolled, cut the log into 12 equal pieces (about 1 1/2 inches each).
  5. Second Rise:Place the rolls into a greased baking dish, cover them again with a towel, and let them rise for another 1-2 hours until they have puffed up nicely.
  6. Bake the Rolls:Preheat your oven to 350°F (175°C). Once preheated, bake the rolls for about 17-20 minutes, or until they are golden brown.
  7. Prepare and Add Frosting:While the rolls are baking, prepare the frosting. In a mixing bowl, beat together 2 oz softened cream cheese, 1/4 cup softened butter, 1 tsp vanilla extract, 1/2 tbsp corn syrup, 1 tsp lemon juice, and 1 1/4 cups powdered sugar until creamy and smooth. Once the rolls are out of the oven, frost them generously using half of the frosting while they are still warm, and then add the remaining half for extra sweetness!
