  • 100 g Butter (3.5 oz), room temperature – Acts as the base of the dough, adding richness and helping achieve a tender texture.
  • 90 g Sugar (3.1 oz) (½ cup) white – Provides sweetness and assists in caramelization during baking.
  • 175 g Flour (6.1 oz) (1.4 cups) all-purpose – The main structure of the cookies, providing stability and texture.
  • 2 tsp Vanilla powder or Vanilla extract – Adds a warm, comforting flavor that complements the sweetness of the honey.
  • 1/2 tsp Baking powder – A leavening agent that helps the cookies rise slightly and maintain a soft texture.
  • 3 tbsp Honey or 2 tbsp Golden Syrup (for toffee flavour) – The star ingredient that adds sweetness, moisture, and a depth of flavor.

Instructions

  1. Preheat the oven: Set your oven to 180°C (356℉) to ensure it’s hot and ready for baking.
  2. Prepare the butter and sugar: In a mixing bowl, combine 100 g (3.5 oz) of room temperature butter with 90 g (3.1 oz) of white sugar. Use a hand mixer or a spatula to cream them together until light and fluffy.
  3. Add the rest of the ingredients: Mix in 175 g (6.1 oz) of all-purpose flour, 2 tsp of vanilla powder or vanilla extract, 1/2 tsp of baking powder, and 3 tbsp of honey (or 2 tbsp of golden syrup for a toffee flavor). Blend everything until well combined and a dough forms.
  4. Divide the dough: Once the dough is mixed, divide it into three equal parts.
  5. Shape the dough: Roll each portion of dough into a log shape and place them on a baking tray lined with non-stick baking paper. Leave enough space between the logs as they will spread during baking; it’s best to place only two logs on one tray!
  6. Flatten the rolls: Use your fingers to gently flatten each roll slightly, preparing them for baking.
  7. Bake the cookies: Place the baking tray in the preheated oven and bake for 12-14 minutes, or until the cookies are golden brown.
  8. Cut them warm: After removing the cookies from the oven, carefully cut them diagonally while they are still warm. This step helps maintain their delightful texture!
