  1. Prepping the Potatoes: Preheat your oven to 400°F (200°C). Wash the baby potatoes thoroughly and slice them in half. This ensures they cook evenly and allows formaximum flavor absorption from the glaze.
  2. Making the Honey Mustard Glaze: In a mixing bowl, combine 3 tbsp of olive oil, 2 tbsp of honey, 2 tbsp of Dijon mustard, (and 1 tbsp of whole-grain mustard if you’re using it), 1 tbsp of lemon juice, 1 tsp of garlic powder, salt, and pepper. Whisk these ingredients together until well combined, forming a smooth glaze that will coat your potatoes.
  3. Tossing the Potatoes: Take your halved potatoes and spread them out on a large baking sheet in a single layer. Drizzle the prepared honey mustard glaze over the potatoes, ensuring they are evenly coated. Using your hands or a spatula, toss the potatoes gently in the glaze until they are well-covered.
  4. Roasting: Place the baking sheet in the preheated oven and roast the potatoes for about 30-35 minutes. Halfway through the cooking time, flip the potatoes to ensure they brown evenly. You’re looking for a golden brown color and a crispy texture.
  5. Garnishing and Serving: Once the potatoes are roasted to perfection, remove them from the oven and sprinkle with freshly chopped parsley. Serve warm alongside your favorite main dishes!
