  • 1/4 cup goat cheese – Creamy and tangy, goat cheese complements the sweetness of the beets beautifully. If you are looking for a dairy-free option, you can substitute with a nut-based cheese.
  • 2 tablespoons toasted pistachios – These add a delightful crunch and a hint of nuttiness. Alternatively, you can use almonds or walnuts if preferred.
  • Skewers – Wooden or metal skewers help assemble the dish for easy serving. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Instructions

  1. Preheat your oven to 400°F (200°C). While the oven is heating up, prepare the beets by washing and trimming them.
  2. In a bowl, toss the 4 medium beets with a drizzle of olive oil (about 1 tablespoon should suffice), ensuring they are well-coated. This will help them roast evenly.
  3. Place the beets on a baking sheet lined with parchment paper and roast for 20 minutes, or until they are tender when pierced with a fork.
