Description

Delicious Mediterranean Chicken Meatballs seasoned with herbs & spices, perfect as a main dish or appetizer. Serve with tzatziki for a tasty twist.

Ingredients

Scale
  • 1 lb ground chicken (preferably thighs) – The star of the dish! Lean ground chicken provides a tender texture while capturing the flavorful ingredients.
  • 1/2 cup breadcrumbs (either panko or regular) – Breadcrumbs help bind the meatball ingredients together while providing a light, crispy texture.
  • 1 large egg – This serves as a binding agent, holding the meatballs together and providing moisture.
  • 3 cloves minced garlic – Garlic adds robust flavor and aroma, integral to Mediterranean cooking.
  • 1/4 cup finely chopped red onion – Red onion introduces a slight sweetness and adds complexity to the flavor profile.
  • 1/4 cup chopped fresh parsley – This herb adds a fresh and vibrant taste, synonymous with Mediterranean dishes.
  • 2 tbsp chopped fresh mint – Mint provides a refreshing accent that brightens the overall flavor.
  • 1/4 cup crumbled feta cheese – Feta adds a salty, creamy element that complements the meatballs beautifully.
  • 1/4 cup finely chopped sun-dried tomatoes – Sun-dried tomatoes bring a rich and tangy flavor, enhancing the Mediterranean experience.
  • 1 tsp ground cumin – Cumin introduces an earthy warmth and depth to the flavor.
  • 1 tsp ground coriander – Coriander adds a citrusy, nutty flavor that balances the spices.
  • 1 tsp dried oregano – Oregano is a classic Mediterranean herb that enhances flavor and aroma.
  • Salt & pepper to taste – Essential for seasoning and elevating the flavors of each ingredient.
  • 2 tbsp olive oil (for frying) – Olive oil is a staple in Mediterranean cuisine, perfect for achieving a golden-brown crust on the meatballs.

Instructions

Step 1: Mix & Shape Meatballs

  1. In a large mixing bowl, combine 1 lb ground chicken, 1/2 cup breadcrumbs, 1 large egg, 3 cloves minced garlic, 1/4 cup finely chopped red onion, 1/4 cup chopped fresh parsley, 2 tbsp chopped fresh mint, 1/4 cup crumbled feta cheese, 1/4 cup finely chopped sun-dried tomatoes, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp dried oregano, and salt & pepper to taste.
  2. Using your hands, gently mix until all ingredients are well incorporated but do not overmix.
  3. Form the mixture into meatballs, about 1-inch in diameter. You should yield approximately 20-24 meatballs.

Step 2: Cook the Meatballs

  1. In a large skillet, heat 2 tbsp olive oil over medium heat.
  2. Once the oil is hot, carefully place the meatballs in the skillet, ensuring they are not overcrowded.
  3. Cook the meatballs for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  4. Alternatively, you can bake the meatballs: Preheat your oven to 400°F (200°C) and arrange the meatballs on a baking sheet. Bake for 15-20 minutes until cooked through and browned.

Step 3: Make the Tzatziki Sauce

  1. While the meatballs are cooking, prepare the tzatziki sauce. Grate 1/2 cup cucumber and squeeze out excess moisture.
  2. In a mixing bowl, combine the grated cucumber with 1 cup Greek yogurt, 1 clove minced garlic, 2 tbsp chopped fresh dill, 1 tbsp lemon juice, 1 tbsp olive oil, and salt & pepper to taste.
  3. Mix until evenly blended, then refrigerate until ready to serve.
