- 1 large egg – This serves as a binding agent, holding the meatballs together and providing moisture.
- 3 cloves minced garlic – Garlic adds robust flavor and aroma, integral to Mediterranean cooking.
- 1/4 cup finely chopped red onion – Red onion introduces a slight sweetness and adds complexity to the flavor profile.
- 1/4 cup chopped fresh parsley – This herb adds a fresh and vibrant taste, synonymous with Mediterranean dishes.

Instructions
Step 1: Mix & Shape Meatballs
- In a large mixing bowl, combine 1 lb ground chicken, 1/2 cup breadcrumbs, 1 large egg, 3 cloves minced garlic, 1/4 cup finely chopped red onion, 1/4 cup chopped fresh parsley, 2 tbsp chopped fresh mint, 1/4 cup crumbled feta cheese, 1/4 cup finely chopped sun-dried tomatoes, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp dried oregano, and salt & pepper to taste.
- Using your hands, gently mix until all ingredients are well incorporated but do not overmix.
- Form the mixture into meatballs, about 1-inch in diameter. You should yield approximately 20-24 meatballs.
Step 2: Cook the Meatballs
- In a large skillet, heat 2 tbsp olive oil over medium heat.
- Once the oil is hot, carefully place the meatballs in the skillet, ensuring they are not overcrowded.
- Cook the meatballs for about 4-5 minutes on each side, or until they are golden brown and cooked through.
- Alternatively, you can bake the meatballs: Preheat your oven to 400°F (200°C) and arrange the meatballs on a baking sheet. Bake for 15-20 minutes until cooked through and browned.
Step 3: Make the Tzatziki Sauce
- While the meatballs are cooking, prepare the tzatziki sauce. Grate 1/2 cup cucumber and squeeze out excess moisture.
- In a mixing bowl, combine the grated cucumber with 1 cup Greek yogurt, 1 clove minced garlic, 2 tbsp chopped fresh dill, 1 tbsp lemon juice, 1 tbsp olive oil, and salt & pepper to taste.
- Mix until evenly blended, then refrigerate until ready to serve.
