  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Frosting:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan to prevent sticking.
  2. In a medium bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Set this mixture aside.
  3. In a large bowl, cream together 1/2 cup of softened unsalted butter, 1 cup of creamy peanut butter, 1 cup of granulated sugar, and 1 cup of packed brown sugar. Beat the mixture until it becomes light and fluffy.
  4. Add 2 large eggs to the creamed mixture, one at a time, ensuring each is fully incorporated before adding the next. Stir in 1 teaspoon of vanilla extract until well combined.
  5. Gradually add the flour mixture to the creamed mixture, alternating with 1 cup of buttermilk. Begin and end with the flour mixture. Mix until just combined; be careful not to overmix.
  6. Pour the batter into the prepared baking pan, using a spatula to smooth the top evenly.
  7. Bake in the preheated oven for 30-35 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  8. After baking, allow the cake to cool completely in the pan on a wire rack.
  9. While the cake cools, prepare the frosting by creaming together 1/2 cup of softened unsalted butter and 1/2 cup of creamy peanut butter until smooth. Gradually add 3 cups of powdered sugar, 1/4 cup of milk, and 1 teaspoon of vanilla extract. Beat until the frosting is light and fluffy, adjusting the consistency if necessary.
  10. Once the cake is cool, spread the creamy frosting evenly over the top. Slice, serve, and enjoy!
