Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan to prevent sticking.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Set this mixture aside.
- In a large bowl, cream together 1/2 cup of softened unsalted butter, 1 cup of creamy peanut butter, 1 cup of granulated sugar, and 1 cup of packed brown sugar. Beat the mixture until it becomes light and fluffy.
- Add 2 large eggs to the creamed mixture, one at a time, ensuring each is fully incorporated before adding the next. Stir in 1 teaspoon of vanilla extract until well combined.
- Gradually add the flour mixture to the creamed mixture, alternating with 1 cup of buttermilk. Begin and end with the flour mixture. Mix until just combined; be careful not to overmix.
- Pour the batter into the prepared baking pan, using a spatula to smooth the top evenly.
- Bake in the preheated oven for 30-35 minutes. The cake is done when a toothpick inserted into the center comes out clean.
- After baking, allow the cake to cool completely in the pan on a wire rack.
- While the cake cools, prepare the frosting by creaming together 1/2 cup of softened unsalted butter and 1/2 cup of creamy peanut butter until smooth. Gradually add 3 cups of powdered sugar, 1/4 cup of milk, and 1 teaspoon of vanilla extract. Beat until the frosting is light and fluffy, adjusting the consistency if necessary.
