- Make the Cheesecake Filling: In a large mixing bowl, beat 2 cups of softened cream cheese with an electric mixer on medium speed until creamy and smooth. Gradually add 1 cup of granulated sugar and continue to mix until well incorporated. Add ½ cup sour cream, 3 large eggs, and 1 tsp vanilla extract, mixing until just combined. Be careful not to overmix, as it may incorporate too much air into your batter.
