- Whipped Cream:
- 2 (8-oz.) packages of cream cheese
- 1/2 cup of sugar
- 1 cup of heavy cream
- Filling:
- 4 1/2 cups of milk
- 3 packages of vanilla pudding mix
- 2 teaspoons of vanilla extract
- 1/4 cup of chopped pecans
- 1/2 teaspoon of salt
- Topping:
- 1 1/2 cups of pecans (halved)
- 1/4 cup of caramel sauce
- 1/2 teaspoon of cinnamon
- Graham crackers (for layering)
Instructions
- Prepare the Whipped Cream: In a mixing bowl, beat together 2 (8-oz.) packages of cream cheese and 1/2 cup of sugar until fluffy. Gradually add 1 cup of heavy cream to the mixture, continuing to beat until stiff peaks form. Set aside.
- Make the Filling: In another bowl, whisk together 4 1/2 cups of milk, 3 packages of vanilla pudding mix, and 2 teaspoons of vanilla extract. Fold in 1/4 cup of chopped pecans and 1/2 teaspoon of salt. Allow the filling to thicken for about 5 minutes.
- Prepare the Topping: In a small bowl, mix 1 1/2 cups of halved pecans with 1/4 cup of caramel sauce and 1/2 teaspoon of cinnamon.
- Layer the Ingredients: In a 9″x13″ pan, start by adding a layer of the cream cheese mixture. Top with a layer of graham crackers, followed by the prepared pudding mix. Add another layer of the cream cheese mixture, then finish with the pecan topping. Refrigerate for at least 6 hours to set.
- Serve: Before serving, drizzle extra caramel sauce on top for added sweetness. Enjoy every delicious bite!
