- 12 frozen phyllo shells
- 4 tbsp goat cheese chevre
- 1/2 cup pomegranate arils
- 2 tsp honey
- 2 tbsp fresh thyme

- Preheat your oven: Set your oven to 350°F (175°C). This ensures that your bites will cook evenly and achieve that golden-brown color.
- Prepare the phyllo shell: Take the frozen phyllo shells out of the packaging. Arrange them on a baking tray lined with parchment paper to prevent sticking.
- Fill the phyllo shells: Using a small spoon, fill each phyllo shell with 1 teaspoon of goat cheese (approximately 4 tablespoons total). Make sure to distribute the cheese evenly among the shells.
- Add thyme and honey: Sprinkle fresh thyme over the goat cheese filling (about 1/2 teaspoon of thyme per stack), then drizzle 1/2 teaspoon of honey on top of each filled shell.
- Bake: Place the baking tray in the oven and bake for 6-7 minutes, or until the phyllo shells are golden brown and crispy, and the cheese is warm and soft.
- Finish with pomegranate arils: Remove the bites from the oven and let them cool slightly. Top each bite with a couple of pomegranate arils and sprinkle additional thyme for garnishing.
