Ingredients

  • 2 slicesbacon (diced)
  • 1 smallsweet onion (diced)
  • 1 mediumbell pepper (diced)
  • 2 clovesgarlic (minced)
  • 1 tablespoonsmoked paprika
  • 1/4 - 1/2 teaspoonchipotle chili powder
  • 1/4 teaspoonsalt
  • 1/4 teaspoonblack pepper
  • 2 tablespoonsapple cider vinegar
  • 2 tablespoonsBBQ sauce
  • 2 tablespoonsketchup
  • 1 tablespoondijon mustard
  • 1 tablespoonbrown sugar
  • 2 cansbaked beans ((22 ounce cans, preferably Bush's Grillin' Beans))
  • 2 slicesbacon (for topping, optional)

Instructions

    Preheat the oven to 400 degrees F.

    Heat a large skillet over medium-low heat and add the bacon. Cook until it’s brown and crisp.

    Stir in onion, pepper and garlic. Cook until soft, about 5 minutes. Add paprika, chili powder, salt and pepper, cooking for 1 to 2 minutes.

    Add vinegar, BBQ sauce, ketchup, mustard and brown sugar until combined.

    Stir in baked beans. Bring to a boil, then turn off heat. Adjust seasoning as necessary.

    Transfer to oven and bake for 30 to 35 minutes until bubbly.
