Burrata Bruschetta with Cherry Tomatoes & Basil

Burrata Bruschetta with Cherry Tomatoes & Basil

Ingredients

  • 1baguette or ciabatta bread (sliced into 1-inch thick pieces (about 12 slices))
  • 8 ouncesof burrata cheese
  • 2 cupsof cherry tomatoes (halved)
  • 1/4 cupof fresh basil leaves (torn)
  • 2 tablespoonsof extra virgin olive oil (plus more for drizzling)
  • 1 cloveof garlic (peeled and halved)
  • Salt and freshly ground black pepper to taste

Instructions

  1. 1

Preheat the oven: Begin by preheating your oven to 400°F (200°C).

  2. 2

Prepare the bread: Arrange the sliced baguette or ciabatta on a baking sheet. Use a brush to lightly coat each slice with olive oil.

  3. 3

Toast the bread: Place the baking sheet in the oven and toast the bread for about 5-7 minutes, or until it is golden brown. Keep an eye on it to avoid burning.

  4. 4

Add garlic: Once the bread is toasted, remove it from the oven. While still warm, rub the cut side of the garlic clove on each slice to impart a subtle garlic flavor.

  5. 5

Prepare the topping: In a mixing bowl, combine the halved cherry tomatoes, torn basil, 2 tablespoons of olive oil, salt, and pepper. Stir gently to combine, ensuring the tomatoes are well coated.

  6. 6

Assemble the bruschetta: On each toasted bread slice, spoon a generous amount of the cherry tomato mixture on top. Then, tear the burrata cheese and place it over the tomatoes, allowing the creamy center to spill over the sides.

  7. 7

Drizzle and serve: Finish with an extra drizzle of olive oil and additional salt and pepper to taste. Serve immediately while the bread is still warm.
