Ingredients

  • 3 ¼ cupsall-purpose flour ((stir, spoon & level))
  • 1 teaspoonsalt
  • 1 teaspoonbaking soda
  • 1 cupunsalted butter ((2 sticks) room temperature)
  • 1 cuplight brown sugar ((gently packed))
  • ¾ cupgranulated sugar
  • 2 largeeggs
  • 1 Tablespoonvanilla extract
  • 1 cupsemi-sweet chocolate chips
  • 9 ouncesCadbury mini eggs

Instructions

    Place the Cadbury mini eggs inside of a zip-top bag and use a mallet or rolling pin to break up the candies into smaller pieces. Set aside.

    Preheat the oven to 350 degrees Fahrenheit. Line cookie sheet trays with parchment paper or a silicone baking mat.

    Stir together the flour, salt, and baking soda in a large bowl.

    In the bowl of a stand mixer, cream together the butter and both sugars. Add the eggs and vanilla. Mix well.

    Add the dry ingredients to the butter mixture and mix until just combined. Add the chocolate chips and 1/2 cup of crushed Cadbury mini eggs. Mix gently.

    Use a cookie scoop to spoon the dough onto the prepared baking sheet about 3 inches apart. Press the remaining Cadbury mini egg pieces into the tops.

    Bake at 350°F for 10 minutes or until the edges are just starting to brown. Allow to cool slightly before transferring to a wire rack.
