Ingredients

Instructions

    Prepare the sweet potatoes: Take 2 large sweet potatoes, peel them, and dice them into bite-sized chunks. Place the diced sweet potatoes in a mixing bowl and drizzle with 1 tablespoon of olive oil. Toss until all pieces are well-coated. Spread them out in a single layer on the prepared baking sheet. Roast for 20-25 minutes or until tender, flipping halfway through for even cooking.

    Cook the turkey bacon: In a separate pan, cook 12–16 strips of turkey bacon over medium heat for 5-6 minutes or until pliable but not fully crisp. Drain on paper towels to remove excess grease. This step ensures that the bacon will wrap easily around the sweet potatoes.
