Ingredients

  • 1can sweet corn (drained (15 oz) - provides sweetness and crunch.)
  • 1red onion (diced - offers a sharp bite and beautiful color.)
  • 1green bell pepper (diced - adds crunch and freshness.)
  • 1red bell pepper (diced - brings in sweetness and vibrant color.)
  • 1 cupfresh cilantro or parsley (chopped - contributes herby freshness that ties everything together.)

Instructions

    Prepare the Dressing: In a medium bowl, combine 1/2 cup olive oil, 1/4 cup granulated sugar, 1/4 cup white wine vinegar, 1 tsp chili powder, and salt to taste. Whisk together until the mixture is smooth and the sugar is fully dissolved. This dressing is essential as it melds all the flavors together.

    Chop the Vegetables: Dice 1 lb Roma tomatoes, 1 red onion, 1 green bell pepper, and 1 red bell pepper into small cubes. Rinse and drain 1 can black-eyed peas, 1 can black beans, and 1 can sweet corn. Place all the veggies, beans, and corn into a large mixing bowl.
