  • 1medium-sized butternut squash (approximately 2 to 3 pounds, peeled, seeded, and cut into 1-inch cubes)
  • 2 tablespoonsolive oil
  • 1medium onion (chopped)

  • 1carrot (peeled and chopped)
  • 1celery stalk (chopped)
  • 4 cupsvegetable broth
  • 1 teaspoondried thyme
  • 1/2 teaspoonground nutmeg
  • Salt and black pepper to taste
  • 1/2 cupheavy cream
  • Fresh parsley (for garnish (optional))

    Place the butternut squash cubes on a large baking sheet.

    Drizzle with 1 tablespoon of olive oil, season with salt and black pepper, and toss to coat.

    Roast in the oven for about 30-35 minutes or until the squash is tender and slightly caramelized.

    In a large soup pot, heat the remaining 1 tablespoon of olive oil over medium heat.
