Ingredients

  • 1 ½ cupsof crushed spiced cookies (such as gingersnaps or speculoos)
  • ½ cupof unsalted butter (melted)
  • 2 tablespoonsof brown sugar
  • 28-ounce packages of cream cheese, softened
  • ¾ cupof granulated sugar
  • 1 teaspoonof vanilla extract
  • 3large eggs
  • ½ cupof sour cream
  • 3medium apples (peeled, cored, and sliced (preferably Granny Smith or Honeycrisp))
  • ¼ cupof granulated sugar
  • 1 teaspoonof ground cinnamon
  • 1 cupof rolled oats
  • ½ cupof all-purpose flour
  • ½ cupof brown sugar
  • ½ cupof unsalted butter (softened)

Instructions

    Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine 1 ½ cups of crushed spiced cookies, ½ cup of melted unsalted butter, and 2 tablespoons of brown sugar. Mix until the crumbs are evenly coated.

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes and then set aside to cool.

    In a large mixing bowl, beat 2 packages of softened cream cheese with ¾ cup of granulated sugar until smooth and creamy.

    Add 1 teaspoon of vanilla extract, and mix in 3 large eggs one at a time, ensuring each egg is fully incorporated.

    Finally, stir in ½ cup of sour cream until well combined.

    Once the filling is smooth, pour it over the cooled crust in the springform pan.

    In a mixing bowl, toss 3 sliced apples with ¼ cup of granulated sugar and 1 teaspoon of ground cinnamon until evenly coated.

    Layer the apple mixture on top of the cheesecake filling.

    In a separate bowl, combine 1 cup of rolled oats, ½ cup of all-purpose flour, and ½ cup of brown sugar.

    Add ½ cup of softened unsalted butter and mix until crumbly.

    Sprinkle the crumble topping evenly over the apples.

    Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set, and the center is slightly jiggly.

    Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

    Once cooled, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to set completely.
