Instructions

    Cookie Base: In a saucepan, melt 1/2 cup unsalted butter over medium heat. Once melted, add 2 cups granulated sugar, 1/2 cup milk, and 1/4 cup unsweetened cocoa powder. Stir the mixture continuously until it comes to a boil. When boiling, let it cook for an additional minute before removing from heat. Immediately mix in 1 teaspoon vanilla extract and 3 cups quick-cooking oats until fully combined.

    Form Cookies: Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet. Allow them to cool for about 30 minutes until they harden slightly.

    Mint Filling: While the cookie base cools, melt 1 cup mint chocolate chips with 1/4 cup heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring in between until the mixture is smooth and well combined. Once ready, spread a layer of the mint filling over each cooled cookie.

    Chocolate Coating: In another bowl, melt 1 cup chocolate chips using the same microwave method as before. Dip each cookie into the melted chocolate, ensuring they are fully coated. Use a fork to remove them, allowing any excess chocolate to drip back into the bowl.
