Ingredients

  • Sugar (2/3 cup: Adds sweetness and affects the texture.)
  • Eggs (3 large: Act as an emulsifier and help create a smooth consistency.)
  • All-purpose flour (1.5 tablespoon: Helps thicken the custard.)
  • Salt (1/8 tsp: Enhances the overall flavor.)
  • Milk (1 cup: The base liquid for the custard.)
  • Bananas (2 large, ripe: Provide the main flavor and natural sweetness.)
  • Cream (1 1/4 cup: Gives the ice cream its rich and creamy texture.)
  • Vanilla (1 tsp: Adds depth to the flavor.)
  • Optional add-ins (such as 1/2 cup toasted walnut pieces or crumbled graham crackers: Add texture and flavor variations.)

Instructions

  1. 1

Prepare the Custard Base: In a mixing bowl, beat the sugar into the eggs until light and fluffy. Mix in the flour.

  2. 2

Heat the Milk: Bring the milk to a simmer in a saucepan.

  3. 3

Combine and Cook: Gradually beat the hot milk into the egg mixture. Return the mixture to the pan, add salt, and cook over low heat until it thickens, stirring constantly. Avoid boiling.

  4. 4

Puree the Bananas: Puree the bananas in a food processor, adding a bit of cream if necessary.

  5. 5

Mix and Chill: Stir the banana puree, remaining cream, and vanilla into the custard. Cover and refrigerate until chilled.

  6. 6

Churn: Process the mixture in an ice cream maker according to the manufacturer's instructions.

  7. 7

Add Extras and Freeze: After the ice cream is churned, you can add optional ingredients like nuts or graham crackers. Then, transfer it to a container and freeze until it reaches the desired consistency.
