
First, ferment the tabasco peppers. Process and pack them into a jar, leaving 1 inch of head space.
Mix unchlorinated water with sea salt and pour over the peppers to cover.
Screw on the lid and set the jar to ferment in a dark place for at least 1 week.
After fermentation, pour the mixture into a pot and add vinegar.
Bring to a boil, then simmer for 15 minutes.
Cool slightly and process until smooth, then strain the mixture.
Pour into hot sauce bottles and enjoy.
