    Making the Honey Mustard Glaze: In a mixing bowl, combine 3 tbsp of olive oil, 2 tbsp of honey, 2 tbsp of Dijon mustard, (and 1 tbsp of whole-grain mustard if you're using it), 1 tbsp of lemon juice, 1 tsp of garlic powder, salt, and pepper. Whisk these ingredients together until well combined, forming a smooth glaze that will coat your potatoes.

    Tossing the Potatoes: Take your halved potatoes and spread them out on a large baking sheet in a single layer. Drizzle the prepared honey mustard glaze over the potatoes, ensuring they are evenly coated. Using your hands or a spatula, toss the potatoes gently in the glaze until they are well-covered.
