Ingredients

  • 2 ¼ cupsall purpose flour
  • 1 teaspoonbaking soda
  • ¼ teaspoonsalt
  • 1 cupsalted butter (unsalted also works!)
  • 1 cuppacked dark brown sugar
  • ½ cupgranulated sugar
  • 1 tablespoonlime zest ((from 2 key limes or 1 large lime))
  • 1 largeegg
  • 1egg yolk
  • 1 teaspoonvanilla extract
  • 8 ounceswhite chocolate (chopped)
  • ¾ cupcoarsely chopped roasted macadamia nuts

Instructions

    First, brown your butter by adding it to a large saucepan over medium heat. Whisk constantly until it turns a golden amber color and gives off a nutty aroma. Transfer to a bowl to cool.

    In a mixer, combine the brown butter, dark brown sugar, granulated sugar, and lime zest. Mix on medium speed for about 1-2 minutes.

    Add in the egg, egg yolk, and vanilla, mixing until smooth and creamy.

    In a separate bowl, whisk together flour, baking soda, and salt. Slowly add to the mixer and combine. Then mix in white chocolate and macadamia nuts.

    Scoop about 2 tablespoons of dough, roll into balls, and chill in the fridge for 1 hour.

    Preheat oven to 350°F. Place dough balls on baking sheet and bake for 9-11 minutes until the edges are golden brown.
