Ingredients

  • 1 cupgranulated sugar
  • 2 tablespoonslime zest
  • ½ cupfresh squeezed lime juice ((from 6 to 10 limes))
  • 4 largeeggs
  • ¼ cupall-purpose flour (*)
  • 2 tablespoonssalted butter (or vegan butter) (at room temperature)
  • 1 to 4 dropsartificial dye-free green food coloring (optional) (to get a bright green color)
  • 1 ½ cupsfine blanched almond flour
  • 3 tablespoonsmelted coconut oil ((or sub melted vegan butter or regular butter))
  • 2 tablespoonspure maple syrup
  • 1 teaspoonvanilla extract
  • ¼ teaspoonsalt
  • Powdered sugar (for dusting)
  • Additional lime zest (optional)

Instructions

    Preheat the oven to 350 degrees F. Line an 8x8 inch square pan.

    In a medium pot, add the sugar and lime zest, then rub the mixture together for about 30 seconds. Add lime juice, eggs, and flour, and whisk until combined. Set aside.

    In a bowl, mix almond flour, coconut oil, maple syrup, vanilla extract, and salt until crumbly. Press into the pan and bake for 8-9 minutes until golden. Remove and set aside.

    Whisk lime mixture over medium-low heat until thick (6-8 mins). Pour over a sieve into a bowl, stir in butter and green food dye. Pour over crust and bake for 8-11 mins until set.

    Cool bars for 1-2 hours at room temperature, then chill for at least 6 hours. Dust with powdered sugar and cut into 16 bars.
