Loaded Cheesy Pocket Tacos

Ingredients

  • 1packet taco seasoning
  • 1 poundground beef
  • ½ cupsalsa
  • 8 ouncescream cheese (softened)
  • 2 tablespoonsmelted butter
  • 1 cupshredded Cheddar cheese
  • 12 6- inchtortillas

Instructions

  1. 1

Brown the Beef: Heat a skillet over medium heat. Add 1 pound of ground beef, breaking it apart with a spatula. Cook until browned, which usually takes about 8-10 minutes. Drain any excess grease from the skillet.

  2. 2

Season the Beef: Stir in 1 packet of taco seasoning according to the packet’s instructions, ensuring the seasoning is evenly distributed throughout the beef. This step typically takes an additional 1-2 minutes.

  3. 3

Prepare Cream Cheese Mixture: In a separate bowl, use a hand mixer or whisk to beat 8 ounces of softened cream cheese until smooth. Blend in ½ cup of salsa until the mixture is uniform.

  4. 4

Assemble the Tacos: Lay a 6-inch tortilla flat on a clean surface. Spread approximately 2 tablespoons of the cream cheese mixture in the center of the tortilla. Top it with 2-3 tablespoons of the seasoned beef, followed by a generous sprinkle of ⅓ cup shredded Cheddar cheese.

  5. 5

Form the Pocket: Carefully fold the tortilla over the filling, burrito-style, creating a tight pocket to prevent spilling.

  6. 6

Prep for Baking: Preheat the oven to 350°F (175°C). Lightly spray a baking tray with cooking spray. Arrange the filled tortillas on the tray and brush the tops with 2 tablespoons of melted butter to encourage a golden brown finish.

  7. 7

Bake: Place the tray in the preheated oven and bake for about 15 minutes, or until the tortillas are golden and crispy.
