Mediterranean Chicken Meatballs

Ingredients

  • 1 lbground chicken (preferably thighs - The star of the dish! Lean ground chicken provides a tender texture while capturing the flavorful ingredients.)
  • 1/2 cupbreadcrumbs (either panko or regular - Breadcrumbs help bind the meatball ingredients together while providing a light, crispy texture.)
  • 1large egg - This serves as a binding agent (holding the meatballs together and providing moisture.)
  • 3 clovesminced garlic - Garlic adds robust flavor and aroma (integral to Mediterranean cooking.)
  • 1/4 cupfinely chopped red onion - Red onion introduces a slight sweetness and adds complexity to the flavor profile.

  • Salt & pepper to taste - Essential for seasoning and elevating the flavors of each ingredient.
  • 2 tbspolive oil (for frying - Olive oil is a staple in Mediterranean cuisine, perfect for achieving a golden-brown crust on the meatballs.)

Instructions

    In a large mixing bowl, combine 1 lb ground chicken, 1/2 cup breadcrumbs, 1 large egg, 3 cloves minced garlic, 1/4 cup finely chopped red onion, 1/4 cup chopped fresh parsley, 2 tbsp chopped fresh mint, 1/4 cup crumbled feta cheese, 1/4 cup finely chopped sun-dried tomatoes, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp dried oregano, and salt & pepper to taste.

    Using your hands, gently mix until all ingredients are well incorporated but do not overmix.

    Form the mixture into meatballs, about 1-inch in diameter. You should yield approximately 20-24 meatballs.

    In a large skillet, heat 2 tbsp olive oil over medium heat.

    Once the oil is hot, carefully place the meatballs in the skillet, ensuring they are not overcrowded.

    Cook the meatballs for about 4-5 minutes on each side, or until they are golden brown and cooked through.

    Alternatively, you can bake the meatballs: Preheat your oven to 400°F (200°C) and arrange the meatballs on a baking sheet. Bake for 15-20 minutes until cooked through and browned.

    While the meatballs are cooking, prepare the tzatziki sauce. Grate 1/2 cup cucumber and squeeze out excess moisture.

    In a mixing bowl, combine the grated cucumber with 1 cup Greek yogurt, 1 clove minced garlic, 2 tbsp chopped fresh dill, 1 tbsp lemon juice, 1 tbsp olive oil, and salt & pepper to taste.

    Mix until evenly blended, then refrigerate until ready to serve.
